Okay call me a freak but there are so many crazy unique coffee makers out there that I just had to share. 😀

I love the imagination of the designer and the extent as to which they will go to find the more extreme coffee cups. These are some dedicated coffee lovers, hats off to you! Since I lack the engineering of this specific field I will support my beloved coffee the way I do best…never letting my coffee cup or pot go empty. 😀

Spent Coffee grounds update~

Recently we posted some uses for spent coffee grounds, one of the uses being a fridge deodorizer  instead of Baking Soda. We like to be as thrifty as possible in our house, so I figured this was a good place to start considering the amount of coffee we drink around here. 🙂

So I diligently dried the used coffee grounds in a small Pyrex pan on the kitchen counter, stirring often to let the air circulate.  The grounds were dry in approximately 3 to 4 days. I placed them in a small Tupperware, folded a paper towel over it and secured it with a rubber band. After poking a few holes in the top for ventilation it was off to the fridge for testing.

It was a beneficial coincidence that the day before I had left an onion lamely wrapped on the second shelf. The grounds were definitely put to the test. What grade did they get? Well the second day I could not smell the onion anymore! I was pleased with the way the grounds soaked up the pungent smell. I have left the same grounds in there for about a week now and will probably make it a habit to switch it out every 2 weeks. There is no shortage of coffee grounds around here so there won’t be an issue of running out. 🙂

I hope you find this tip as helpful as I did. Now my Baking Soda can be put in my goodies and not in my fridge. 🙂

My Huckleberry Coffee cake :D

I promised pics of my first batch of Huckleberry Coffee cake…It has been a tasty morning 🙂

It turned out so good, and I was so impressed with the way it tripled in size as it baked. I added a few tablespoons of brown sugar the topping because I am a sucker for the crunchy bits. 😀

Espresso in my coffee this morning….necessity!

When my regular cup of coffee just isn’t strong enough, I like to put a shot of espresso in it to perk it up a notch. We have the cute little espresso pot that we featured a few post ago and it is great for these kinds of mornings. If there is leftover espresso from the day before it works all the same.

I assure you that your cup of joe hit with a little espresso will make your eyes and taste buds get the jolt they need for your day and what ever that day may hold. 🙂

Coffee Cake!…Oh what a Decadent treat!

So being completely honest with my followers I have the following to say….I adore coffee cake.

I would eat it at any time of day or night, as a meal, as a treat, as an over indulgence, as that perfect craving settler…yes oh yes I love coffee cake. Needless to say after drooling over all the pictures of coffee cakes online, I will be making my first batch over the weekend! Soon after there will be guilt free devouring of the delicious coffee cake. 😀

Blueberry Coffee Cake

1/2 cup butter
1 1/3 cups white sugar
2 eggs
1 teaspoon vanilla extract
2 cups buttermilk
4 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups blueberries

2/3 cup all-purpose flour
2/3 cup white sugar
6 tablespoons butter, softened

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 by 13 inch pan. Sift together 4 cups flour, baking powder, baking soda and salt. Set aside.

In a large bowl, cream together 1/2 cup butter and 1 1/3 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Stir in blueberries. Pour batter into prepared pan. In a small bowl, combine 2/3 cup flour and 2/3 cup sugar. Cut in 6 tablespoons butter until mixture resembles coarse crumbs. Sprinkle over top of batter.

Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Coffee Cake with Pecans

Ingredients

  • FOR THE CAKE:
  • 1-1/2 stick Butter, Softened
  • 2 cups Scant Sugar
  • 3 cups Flour, Sifted
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-1/4 cup Whole Milk
  • 3 whole Egg Whites, Beaten Until Stiff
  • _____
  • FOR THE TOPPING:
  • 1-1/2 stick Butter, Softened
  • 3/4 cups Flour
  • 1-1/2 cup Brown Sugar
  • 2 Tablespoons Cinnamon
  • 1-1/2 cup Pecans, Chopped

Preparation Instructions

Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Beat egg whites and set aside.

Cream butter and sugar. Add flour mixture and milk alternately until combined. Don’t overbeat. Fold in beaten egg whites with a rubber spatula. Spread in a well-greased 9 x 13 (or LARGER!) baking pan. A cake pan with higher sides would be best.

In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.

Bake for 40 to 45 minutes, or until no longer jiggly. Serve warm—delicious!

Deluxe Coffee Cake

Ingredients

Topping:

  • 1/2 cup toasted and coarsely chopped walnuts
  • 1/2 cup toasted and coarsely chopped pecans
  • 2/3 cup all-purpose flour, sifted
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon, sifted
  • 1 teaspoon kosher salt
  • 5 tablespoons butter, melted

Coffee Cake:

  • 1/2 stick (4 tablespoons) unsalted butter, plus additional for greasing the pan, room temp
  • 1 cup granulated sugar
  • 2 eggs, room temperature
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking powder, sifted
  • 1 teaspoon baking soda, sifted
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • 1/2 cup whole milk yogurt
  • 1 (13 by 9-inch) baking pan

Topping:

Line a baking sheet with parchment paper. In a medium bowl, combine the nuts, flour, sugars, cinnamon and salt. Stir to blend. Stir in the butter. The topping should form sandy clumps.  Sprinkle the topping onto the baking sheet to break it up into smaller clumps. Refrigerate.

Coffee cake:

Preheat the oven to 350 degrees F. Use butter to thoroughly grease the bottom and sides of a 13 by 9-inch baking pan. Set aside.

In the bowl of an electric mixer fitted with the whisk attachment, cream the butter and sugar together until light yellow and smooth, 5 to 8 minutes. Alternatively, this can be done with an electric hand mixer. Add the eggs, 1 at a time, and beat until thoroughly integrated.

Remove the topping from the refrigerator so it has a few minutes to come to room temperature before baking. Meanwhile, sift together the flour, baking powder, baking soda and salt. In a separate bowl, whisk together the buttermilk and yogurt until smooth. Turn the mixer on low and alternate, adding some of the flour mixture with some of the sour cream mixture. When all has been mixed, give the sides and the bottom of the bowl a scrape and blend to make sure the batter is thoroughly integrated. Transfer the batter to the greased baking pan, spreading it out evenly. Liberally sprinkle the cake with all of the topping. Take care to cover the whole top. Put the pan in the center of the oven and bake until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Remove the cake from the oven and allow to cool for 30 minutes before serving.

Ingredients:

  • 1⁄2 cup firmly packed brown sugar
  • 1⁄2 cup sliced almonds
  • 2 teaspoons ground cinnamon
  • 1 2⁄3 cups all-purpose flour
  • 1 1⁄2 teaspoons baking powder
  • 1⁄2 teaspoon baking soda
  • 3⁄4 cup butter, softened
  • 1 1⁄4 cups sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325˚. Spray 2 (12-cup) muffin pans with nonstick cooking spray.
  2. In a small bowl, combine brown sugar, almonds, and cinnamon.
  3. In a medium bowl, combine flour, baking powder, and baking soda.
  4. In a large bowl, beat butter and sugar at medium-high speed with an electric mixer until fluffy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture, alternately with sour cream, beginning and ending with flour mixture, beating just until combined after each addition. Stir in vanilla.
  5. Spoon half of batter evenly into prepared muffin cups. Sprinkle half of brown sugar mixture evenly over batter. Spoon remaining batter evenly over brown sugar mixture. Sprinkle remaining brown sugar mixture over batter. Bake for 20 to 24 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and serve warm.

Best part of waking up??

Do I even have to ask? 🙂 Coffee! Especially when I remember the night before to prep the “Ol Faithful” coffee pot to auto brew. I tell ya the days I wake up and there is no coffee I scold my night self for not thinking of me…

The winter days are plentiful here in our neck of the woods, which means the hot beverages of winter are always welcome! So we wanted to share a few with you. Enjoy! And share with us know your favorite winter beverage!

Cajun Coffee

Molasses will bring a strong and wonderful flavour to your cup of coffee, along with a dash of good Caribbean rum.

Serve hot with whipped cream.

Ingredients:

  • 3 cups hot coffee
  • 6 tbs molasses
  • 6 tbs dark rum
  • Whipped cream

Preparation:

Heat coffee and molasses in a saucepan until molasses is dissolved. Put 1 tbs of rum in each mug, and pour coffee over. Top with whipped cream. Serves 6

Danish Coffee

You can really taste the rum in this one, great for a crowd. Simmering with spices for a few hours will build up the flavour of cinnamon and cloves.

Ingredients:

  • 8 cups hot coffee
  • 1 cup dark rum
  • 3/4 cup sugar
  • 2 cinnamon sticks
  • 12 cloves, whole

Preparation:

Heat everything through over low heat and simmer for about 2 hours. Serves 8-10

My Absolute Favorite!

Old Fashioned Hot Buttered Rum recipe

1  cup sugar
1 cup brown  sugar
1  cup butter
2 cups vanilla  ice cream
rum
water
nutmeg
1. Combine sugar, brown sugar and butter in a 2-quart saucepan. Cook over low heat, stirring occasionally, until butter  is melted (6-8 min).
2. Combine cooked mixture with ice-cream in a large mixing bowl, and beat at medium speed,  scraping bowl often until smooth (1-2 min). Store refrigerated up to 2 weeks or  frozen up to one month.
3. For each serving, fill one-quarter of a mug  with mixture, add one ounce rum and three-quarters of a cup of boiling water.  Sprinkle with nutmeg.

Now I know what your thinking… not all of these have Coffee in them but we have to be open to all drinks, or we wouldn’t be the adventurous people we are. 😀 We love putting a scoop of the Rum batter in our morning coffee. It is fantastic and delicious. It is a great treat on a cold winter morning, or after dinner for a dessert coffee…That reminds me… I think we still have some Batter in the freezer! Woo Hoo! Looks like my lunch coffee will have a little kick to it! 🙂
